PASTA SPIRITOSA 
1/4 c. gin or vodka
1/2 tsp. red pepper flakes
2 tbsp. butter
1 tbsp. olive oil
1/4 c. finely chopped shallots
4 oz. prosciutto, cut into thin strips
1 (28 oz.) can Italian tomatoes, drained & coarsely chopped
1/3 c. heavy cream
Salt & freshly ground pepper
1 lb. penne or ziti
1/3 c. grated Parmesan cheese

In small bowl, combine vodka or gin and red pepper flakes; let steep several hours.

In large skillet, melt butter with olive oil over medium heat. Add shallots and saute until tender, about 5 minutes. Stir in prosciutto and cook 2 minutes. Add tomatoes and simmer 20 minutes. Add cream and cook 3 minutes. Strain red pepper flakes from vodka; add vodka to sauce. Simmer 4-5 minutes and season with salt and pepper.

Cook pasta according to package directions. Transfer to warm serving bowl. Add sauce and Parmesan; toss well. Makes 4 to 6 servings.
