APRICOT DATE RAISIN BARS 
3 oz. oatmeal
1 c. flour
1/4 c. brown twin sugar
1/2 tsp. baking powder
6 tbsp. plus 2 tsp. butter
5 tsp. honey
10 tsp. coconut
16 dried apricot halves, chopped
6 dates, chopped
6 tbsp. raisins
1/2 c. water
5 tsp. sunflower seeds

Combine oatmeal, flour, sugar, baking powder, butter, honey and coconut. Mix well. Set aside. Cook apricots, dates, raisins and water in a small saucepan until the water is absorbed. Spread 1/2 of the oatmeal mixture in a 9 x 9 inch dish. Spread fruit mixture on top of oatmeal mixture. Next, combine the remaining oatmeal mixture with the sunflower seeds. Sprinkle evenly over the fruit mixture and press lightly.

Bake at 325°F for 25 minutes or until lightly browned. Divide evenly into 10 squares.
