EASY APPLE COFFEE CAKE 
1 pkg. yellow cake mix
1 (4 oz.) pkg. instant vanilla pudding
1 c. dairy sour cream
1/2 c. vegetable oil
4 eggs
2 or more apples, peeled, thinly sliced
1/2 c. chopped nuts
1/2 c. sugar
2 tsp. cinnamon

Combine dry mix, pudding, eggs, sour cream and oil. Beat at medium speed 5 minutes. Pour 1/2 of batter into greased 9 x 13 inch pan (or a 10 inch tube pan).

Arrange apple (1/2 of them) on batter. Mix sugar, nuts and cinnamon. Sprinkle 1/2 on apples. Cover with rest of batter and add rest of apples and cinnamon mixture on top. Bake 45-60 minutes in 350 degree oven. Cool 5 or more minutes and can serve.
