SWEET POTATO CASSEROLE | |
2 c. mashed sweet potatoes 1/2 c. milk (for canned potatoes) or 1 c. milk for fresh potatoes 2 eggs, beaten 1/2 tsp. nutmeg & 1/2 tsp. cinnamon or 1 tsp. pumpkin spice 1 1/2 c. sugar 3/4 stick melted butter 2 tbsp. cornstarch TOPPING: 3/4 c. crushed corn flakes 1/2 c. nuts 1/2 c. brown sugar 3/4 stick butter 1 c. coconut Mix first 8 ingredients and bake in a greased baking dish at 400 degrees for 20 minutes. Mix ingredients for topping. Spread on top of potatoes and bake 10 minutes longer. |
