SWEET POTATO CASSEROLE 
3 c. cooked sweet potatoes, mashed
1 c. sugar
1 stick butter, melted
2 eggs, beaten
1/2 c. milk
1 tsp. vanilla

TOPPING:

1/3 c. butter, melted
1/3 c. flour
1/2 tsp. baking powder
1 c. chopped pecans
1 c. brown sugar
1 c. coconut (optional)

Combine first six ingredients. Pour into greased casserole dish. Combine topping ingredients. Sprinkle onto casserole. Bake, uncovered, for 30-45 minutes at 350 degrees.
