TACO SALAD 
1 med. head lettuce
2 lbs. lean ground beef
1 lg. tomato, diced
1/2 c. onion, chopped
1 lb. Cheddar cheese, grated
Salsa
Low calorie ranch dressing
Corn chips
Olives, sliced
2 tsp. instant minced onion
1 tsp. chili powder
1/2 tsp. crushed red pepper
1/2 tsp. instant minced garlic
1/4 tsp. oregano
1/2 tsp. cumin
1/2 c. water

Brown ground beef just until pink is gone. Then add 2 teaspoons instant minced onion, chili powder, crushed red pepper, instant minced garlic, oregano and cumin. Mix well. Add water and simmer until water is gone.

Meanwhile, break up lettuce in large bowl. Chop onion and tomato, and grate cheese; set aside until meat mixture is done. Place meat mixture on lettuce and top with onion, tomato, cheese, salsa, ranch dressing and olives. Garnish with corn chips.
