CARROT NUT LOAF | |
1 1/2 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1 tsp. ground cinnamon 3/4 c. vegetable oil 2 eggs 1 c. sugar 1 c. grated carrots 1 c. chopped pecans Combine first 4 ingredients in small bowl; set aside. Combine eggs, oil and sugar in large mixing bowl; beat at medium speed with electric mixer for 1 minute; add dry ingredients. Fold in carrots and pecans. Batter will be stiff. Spoon batter into a greased, floured pan. Bake 1 hour and 25 minutes until done (350 degrees). Cool completely. |
