CARROT-NUT BREAD 
2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. grated, pared carrots
1/2 c. chopped walnuts or pecans
1 c. dark brown sugar
2 eggs
1 c. milk
1/4 c. melted butter

Preheat oven to 350 degrees. Sift flour, baking powder, soda, salt and cinnamon together. In a bowl, combine carrots and walnuts. Toss to mix. Then add the brown sugar.

In a large bowl, beat eggs until foamy, then beat in milk and butter. Stir in carrot mixture, then flour.

Bake at 350 degrees for 1 hour. Let cool 5 minutes, then turn out.

Recipe makes 2 large loaves.
