JIM'S BEEF MEATBALLS AND
MUSHROOM SAUCE

MEATBALLS:

1 lb. ground beef
1/2 head garlic, chopped fine
2 tbsp. dark soy sauce
1 egg
1 tbsp. sesame oil
1/2 cup bread crumbs

Mix meatball ingredients well and brown in oiled (virgin olive oil is best, but any oil will do) frying pan. If you want more flavor in the meatballs, mix in the evening, cover and let sit in the refrigerator overnight.

SAUCE:

2 (10 oz. ea.) cans Campbell's mushroom soup
1 (10 oz.) can Campbell's beef broth
2 medium sized onions, very coarsely chopped

Mix mushroom soups and beef broth until smooth and add onions. Add meatballs and oil into sauce.

Bake in a covered casserole dish at 350°F for 1 hour or in a slow cooker for the day.

Serve over rice or noodles. Or, if you are using a slow cooker, add potatoes to the mixture (you can also add root vegetables like carrots and turnips).
