FIESTA PASTA SALAD (HOLD THE
FIESTA)
 
2 cups elbow macaroni noodles
1/3 yellow pepper, diced
1/3 green pepper, diced
1 large peeled carrot, finely grated
diced fresh tomatoes (I use cherry or plum)
1 1/2 tbsp. grated Parmesan cheese
2 tbsp. sharp cheddar cheese (finely shredded or grated)
zest of 1 lemon
2 squirts fresh lemon (juice from a thin slice of lemon)
pinch or two of black pepper (to desired taste)

Cook noodles according to package directions. Drain.

Mix all ingredients well and enjoy!

Note: You can add a little hot pepper for heat if you desire the Fiesta part of the salad. Use a small amount of hot pepper since a little goes a long way!
