FIESTA PASTA SALAD (HOLD THE
FIESTA)
 
1 1/2 to 2 cups elbow macaroni pasta
1/3 yellow pepper, diced
1/3 green pepper, diced
1 large peeled carrot, finely grated
diced fresh tomatoes (cherry or plum) (not too juicy)
1 to 1 1/2 tbsp. Parmesan cheese
1 to 2 tbsp. sharp cheddar cheese (finely shredded or grated)
zest of 1 lemon
2 squirts fresh lemon (juice from a thin slice of lemon)
1/2 cup zesty Italian dressing (Kraft)
pinch or 2 black pepper (to desired taste)

Prepare macaroni pasta according to package directions. Drain and cool.

Mix all ingredients well and enjoy!

Note: You can add a little hot pepper for heat if you desire the Fiesta part of the salad. Use a small amount of hot pepper though. A little goes a long way!
