PUMPKIN ROLL 
1 tsp. baking soda
3 eggs
1 c. sugar
2/3 c. pumpkin
1 c. flour
1 tsp. cinnamon

Beat eggs until foamy; add other ingredients. Grease a jelly roll pan, 17 1/4 x 11 1/2 x 1 inch. Pour into pan. Bake at 350 degrees for 15 minutes.

Let stand, then flip over onto a towel. Roll pumpkin roll and towel together into a roll. Cool 45 minutes.

ICING:

4 tbsp. butter
1 c. confectioners sugar
1 tsp. vanilla
8 oz. cream cheese

Mix until creamy. Unroll cake, ice and reroll.
