CRABMEAT AU GRATIN 
1 lb. crabmeat
1/2 c. sliced mushrooms
1/2 c. milk
1/2 c. light cream
1/2 stick butter
1/2 c. green onions, chopped fine
2 tbsp. flour
1 lb. cheddar cheese, grated
Salt & pepper to taste

Over medium heat, saute green onions in melted butter until tender. Blend in flour with this mixture. Gradually pour in milk and cream, stirring constantly. Add about 1/2 cup grated cheese, stirring until cheese melts. Add crabmeat, mushrooms, salt and pepper to taste.

Pour into lightly greased casserole dish, sprinkle with remaining cheddar cheese. Bake at 350 degrees for 15 minutes, or until cheese melts and is bubbly. Serves 4.
