ZESTY HOMINY 
2 cans tomato sauce
1 tbsp. (heaping) chili powder
Grated cheddar cheese
Salt to taste
2 lg. cans white hominy, drained
1/2 sm. onion, chopped

Chop and saute onion. Add tomato sauce and 2 cans water, salt, pepper and chili powder; simmer 20 minutes. Drain hominy and pour into hot sauce. Put into casserole dish and top with grated cheese. Bake in hot oven until cheese is melted.
