BAKED BEANS 
2 c. dry beans
1 tsp. baking soda
1/4 lb. salt pork
1 med. onion
1 tsp. salt
1 1/2 tsp. dry mustard
1/4 c. sugar
1/4 c. maple syrup
1/3 c. catsup
1/2 tsp. ginger

Instead of soaking all night, have pot of water boiling. Put beans in with baking soda and boil 2 minutes. Remove from heat and let stand for 1 hour. Bring to boil.

In bottom of bean pot or casserole put salt pork and onion. Fill with beans. Mix seasoning with enough liquid to cover beans and bake in slow oven or crock pot for 5-6 hours. Serves 6.
