BOSTON BAKED BEANS 
2 c. Navy beans (rinsed)
1 med. onion (finely chopped)
1/4 c. unsulphured molasses
3 tbsp. pure maple syrup
1 tsp. fine sea salt
1 tbsp. canola or safflower oil
1/3 c. fruit-sweetened catsup
3 tbsp. tamari (aged soy sauce)
1 tbsp. dry mustard

Put beans into a large bowl; add enough water to cover by 2 inches. Put the bowl in a cool place and let the beans soak for 6 to 12 hours. Drain and rinse.

Put the beans in a large pot; add enough fresh water to cover by 2 inches.

Cover and bring to a boil over medium-high heat, then immediately reduce the heat and simmer.
