ZUCCHINI AND TOMATO SKILLET 
1/2 c. onion (chopped)
1 clove garlic
1 tsp. salad oil
1 tsp. fresh basil
2 zucchini cut up in slices
2 tomatoes

Cook onion and garlic in oil, add zucchini, salt and pepper. Saute for 5 minutes. Then add tomatoes and basil. Might need a 1/2 cup of water. Cook on low heat until tender.
