ZUCCHINI IN SKILLET/SAUTE' 
4 med. zucchini
1 sm. sliced onion
2 tbsp. olive oil or vegetable oil
2 fresh tomatoes, peeled and cut into pieces
1 tsp. salt
1/2 tsp. pepper
1 bay leaf
1/2 tsp. crushed basil leaves

Wash zucchini and slice into 1 inch pieces. Brown onion in oil, add tomatoes and cook, low heat 5 minutes. Add zucchini, salt and pepper. Cook gently until tender, 20 to 25 minutes, adding a little water if necessary. Add bay leaf and basil and cook 2 minutes longer. Serves 4.
