SKILLET ZUCCHINI (WITH RICE) 
1 lb. ground beef
1 med. onion, chopped
4 c. zucchini, sliced
1 clove garlic, minced
15 oz. can tomato sauce
1 c. water
1/2 tsp. salt
1/4 tsp. pepper
2 c. cooked rice
1/4 c. Parmesan cheese

Brown ground beef in a little oil and remove from skillet. Saute zucchini, onion, and garlic; then add remaining ingredients, except rice and cheese. Simmer 10 minutes. Add ground beef and simmer 10 minutes more. Serve over rice and sprinkle with cheese.
