HOT FUDGE PUDDING CAKE 
2/3 c. flour
1/3 c. oat bran
2 tsp. baking powder
2/3 c. sugar
1/3 c. cocoa
1/2 c. skim milk
1 tbsp. oil
1 tsp. vanilla
1/4 c. walnuts

TOPPING:

1/3 c. cocoa
1 c. brown sugar
1 3/4 c. coffee (hot) or 2 tsp. instant plus 1 3/4 c. boiling water

Preheat oven to 350 degrees. Stir flour, oat bran, baking powder, sugar, and cocoa together in a 9 inch baking dish or 1 1/2 quart souffle dish. Add milk, oil, and vanilla; stir in the nuts.

For topping, combine cocoa and brown sugar so the cocoa is evenly dispersed. Sprinkle over batter. Pour hot coffee over all. Bake 45 minutes. During baking the cake will rise, leaving a thick pool of hot fudge sauce beneath. Dip out pieces of cake with a spoon and lavish it with sauce. (Then cheat and put a scoop of good vanilla ice cream or whipped topping on it!) Makes 6 servings.
