BEETS IN ORANGE SAUCE 
Either cook 12 medium beets with 3/4 teaspoon salt in water; drain and slice, or use 2 cans sliced beets, drained.

SAUCE:

1/2 c. sugar
1 1/2 tbsp. cornstarch
1/2 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
1/3 c. wine vinegar
2/3 c. orange juice
2 tbsp. lemon juice
2 tbsp. butter

Mix and cook ingredients for sauce over medium heat, stirring constantly until thick and clear. Add beets to sauce and cook over low heat until beets are hot. Serve immediately. Serves 6.
