BEETS IN SOUR SAUCE 
2 tbsp. butter
2 tbsp. flour
1 can beets, drained, reserve 1/2 c. liquid
1/4 c. vinegar
1/4 c. cream
1 tsp. sugar
1/2 tsp. salt
Pepper

Melt butter and stir in flour. Cook for 2 to 3 minutes. Stir in reserved beet liquid, vinegar, cream, salt, sugar and pepper, and bring to a boil to thicken. Cube beets and add to sauce. Heat thoroughly.
