QUICHE LORRAINE 
9" pastry crust
4 strips bacon, cut in 1/2" pieces
1/2 c. finely chopped onion
1 c. shredded Swiss cheese
4 lightly beaten eggs
1 pt. cream
1/2 tsp. salt
1/ tsp. nutmeg
White pepper

Bake pastry crust for 5 minutes at 450 degrees.

Saute bacon with onion. Place bacon and onion on the pastry crust, then shredded Swiss cheese. Combine lightly beaten eggs with cream, salt, nutmeg and white pepper, then pour into the crust. Bake 15 minutes; reduce temperature to 350 degrees and continue baking 10 minutes. Let stand 5 minutes.
