MIKE'S SEAFOOD GUMBO 
1 c. bell pepper, chopped
1 c. onion, chopped
3 smoked sausage
3 lbs. shrimp
1 lb. crabmeat
1 lg. can tomatoes
1 lb. okra
2 tbsp. parsley
3 tsp. Kitchen Bouquet seasoning
1 tsp. crushed red pepper
3 tsp. Lowery's seasoning salt
2 tsp. Worcestershire sauce
4 tsp. file

Saute onions and bell pepper until tender. Add sausage. When seasoning is tender, saute shrimp in same skillet, after you remove sausage and seasonings. Add all this to pot of boiling water. Simmer for 30 minutes. Add crabmeat, okra and tomatoes. Stir in rest of seasoning except file.

Make a roux using flour and shortening. Brown flour and shortening, stir in enough water to make thick gravy. Add roux to pot of boiling ingredients. Cook for 1 hour. Add file while simmering. Stir. Remove from heat. Serve over rice.

I have been using this recipes for several years. It is truly the best!

My only suggestion is to cheat making the roux by using a 1/2 stick of butter instead & only using a tablespoon of cooking oil.

The roux comes out chocolate color in 10 to 15 mins; just remember to cooking stirring the flour so it doesn't burn.
