LONDON BROIL 
1 (2 lb.) flank steak
1 clove garlic
Salad oil
Salt and freshly ground black pepper to taste
Melted butter
Grated Roquefort cheese

1. Rub steak on both sides with cut garlic. Brush with salad oil and place on a preheated greased broiler rack, 1 1/2 to 2 inches from heat. Broil 5 minutes. Season with salt and pepper.

2. Turn steak, rub in Roquefort cheese.

3. Broil 5 minutes on second side.

4. Cut in very thin slices diagonally across the grain and serve covered with melted butter.
