CHICKEN AND HAM GUMBO 
1 tbsp. vegetable oil
1 c. onion, chopped
1 clove garlic, chopped
1 c. red pepper, chopped (sweet)
1 tbsp. flour, toasted
1 can chicken broth
1 can tomatoes, chopped
1 bay leaf
1/2 tsp. thyme, crumbled
1/4 tsp. black pepper
1/8 tsp. hot red pepper
1 (10 oz.) pkg. frozen okra
3/4 lb. boneless chicken breast, 1 inch cubes
3 oz. ham, diced
1 1/3 c. plain cooked rice

Heat oil in large saucepan on medium heat. Add onion and garlic. Saute 2 minutes. Add sweet red pepper. Saute 2 minutes. Stir in toasted flour until mixed. Add broth, ham, chicken, tomatoes, bay leaf, thyme, black pepper and red hot pepper.

Bring to boil. Lower heat and simmer 20 minutes. Add okra and simmer 10 minutes. Add cooked rice or serve over cooked rice.

Note: To toast flour, preheat oven to very hot (500 degrees). Spread on cookie sheet and bake for 8-10 minutes, stirring until light brown.
