CHICKEN - CREOLE 
1 stick butter
1 whole cut up chicken
1 c. bell pepper, chopped
1 c. onion, chopped
Salt, pepper and garlic salt to taste
1 c. fresh mushrooms
1 lg. can tomato paste
1 lg. can tomato puree

Saute onion and bell pepper in butter. Add tomato paste and tomato puree with 2 large cans of water, so as not too thick or too thin. Boil chicken for about 30 minutes; drain. Lay in large baking dish. Pour mixture over chicken. Bake 25-30 minutes. This is great served with rice.
