CREOLE CHICKEN GUMBO 
1 lg. stewing chicken
2 tbsp. fat
1 slice ham, sliced
2 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
1 c. green pepper
1/4 tsp. thyme
1 (No. 2) can tomatoes
1 qt. water
3 c. sliced okra

Cut chicken, wash and pat dry. Heat in soup pot. Add chicken and ham. Cover and cook 15 minutes. Add salt, pepper, onion, green pepper, thyme and tomatoes. Add water, cover and allow to simmer 2 hours or until tender. Add okra, cover and cook 20 minutes or until okra is tender. Can take bones from chicken. Serve real hot over hot rice.
