CREOLE GUMBO SOUP | |
4 tbsp. oil or bacon grease 4 stalks celery, chopped fine 2 lg. onion, coarsely chopped 1 diced green pepper 3 cloves minced garlic 8 pods okra, sliced 1 tbsp. parsley, finely chopped 1 lg. can tomatoes 1 can of tomato paste 2 lg. chicken breast, cooked and cubed 1 lb. cooked ham, cubed 1 lb. cooked pork, cubed 1 lb. cooked beef, cubed 1 1/2 lb. shrimp 2 cans crab meat 1 qt. oysters (optional) 1/4 tsp. thyme 1 tsp. file 1 bay leaf Salt and pepper to taste Put oil into large iron skillet and add first six ingredients. Saute until soft but not brown, add shrimp and cook until pink. Into a large pot pour these as well as the remaining ingredients. Add seasoning and simmer for one hour. May be served over fluffy rice. |
