SQUASH CASSEROLE 
2 lb. yellow squash, cooked and drained
1 lg. onion, chopped
1 sm. jar pimentos
1 can cream of mushroom soup
1/2 pt. sour cream
3/4 pkg. Pepperidge Farm cornbread stuffing mix
3/4 stick butter

Melt butter and add stuffing mix. Mix together first 5 ingredients then add 1/2 of stuffing mixture. Mix well.

Turn into baking dish and top with remaining stuffing mixture. Bake at 350 degrees for 45 minutes.
