PEACH JAM 
3 pkg. (1 lb. each) frozen peach slices
7 1/4 c. sugar
1/4 c. lemon juice
1 pouch (3 oz.) liquid pectin (half of 6 oz. pkg.)

1. Remove peaches from packaging and place in 5 quart casserole. Microwave for 9-10 minutes or until thawed, stirring every 3 minutes to break apart. Let stand for 5-10 minutes.

2. Drain peaches, discarding liquid. Stir in sugar and lemon juice. Microwave for 23-25 minutes, or until mixture comes to full rolling boil, stirring 3-4 times to dissolve sugar. Boil for 1 minute. Add pectin. Stir for 5 minutes. Skim and discard foam.

3. Ladle into clean, hot jars. Store covered in refrigerator or in sealed jars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
