PEACH JAM | |
3 pkg. (1 lb. each) frozen peach slices 7 1/4 c. sugar 1/4 c. lemon juice 1 pouch (3 oz.) liquid pectin (half of 6 oz. pkg.) 1. Remove peaches from packaging and place in 5 quart casserole. Microwave for 9-10 minutes or until thawed, stirring every 3 minutes to break apart. Let stand for 5-10 minutes. 2. Drain peaches, discarding liquid. Stir in sugar and lemon juice. Microwave for 23-25 minutes, or until mixture comes to full rolling boil, stirring 3-4 times to dissolve sugar. Boil for 1 minute. Add pectin. Stir for 5 minutes. Skim and discard foam. 3. Ladle into clean, hot jars. Store covered in refrigerator or in sealed jars. |
