MEXICAN CORN BREAD 
1 c. meal
2 eggs
1/2 tsp. baking soda
3/4 tsp. salt
1 can cream corn
1 chopped onion
1/2 c. bacon grease
1 c. milk
4 jalapeno peppers
1 lb. ground beef
16 oz. sliced cheese

Mix together meal, eggs, soda, salt, corn, grease, milk and peppers (use fewer peppers if you don't want it to be too hot). Brown beef and onion. Pour 1/2 of corn bread mixture into greased 13 x 9 pan. Place meat evenly over mixture; place cheese over meat and cover with rest of the cornbread mixture. Bake in 400 degree oven until light brown.
