CHICKEN STIR FRY 
20 oz. chicken, diced
1 1/4 c. chopped celery
1/2 c. green onion
3/4 c. carrot, diagonally sliced
8 c. cabbage, chopped
5 c. Bok Choy, chopped
1 c. mushrooms
2 c. frozen broccoli
1 c. water
1/3 c. soy sauce

Cook chicken and garlic until slightly brown, using no oil, just keep stirring, then add water, soy sauce; cover and let simmer at least 5 minutes; add broccoli. (Serve over steamed rice.) Total calories: 1, 564.
