2 c. granulated sugar
2 c. prepared coffee
1/2 c. shortening
1/2 c. raisins
1 1/2 c. Delicious apples, grated
2 c. flour
1 tsp. baking soda
3 tsp. baking powder
1 tsp. allspice
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped walnuts

Combine sugar, coffee, shortening, raisins and unpeeled grated apple in medium saucepan, bring to boil, reduce heat and simmer for 10 to 15 minutes. Remove from heat and place in refrigerator and cool until needed.

Combine in large mixing bowl flour, soda, baking powder, spices, walnuts. Blend with wire whip or mixer on low speed. When coffee mixture is cool (NOT COLD) add to flour mixture. Stir well to blend (DO NOT MIX). Pour batter into greased and lightly floured 9 x 13 x 2 inch baking pan. Bake 25 to 30 minutes firm to touch in 350 degree oven. Sprinkle with granulated sugar while hot, 2 tablespoons.
