ITALIANO ZUCCHINI 
1/2 c. onions, chopped
1/2 c. green bell peppers, chopped
3 celery stalks, chopped
1 clove garlic, minced
5 tomatoes, chopped
1 lg. zucchini, sliced into spears
1 tsp. Italian seasoning
Parsley springs
Non-stick spray for sauteing

Place onions, pepper, and celery in a pan (spray with non-stick) with garlic and saute. Add remaining ingredients and cook, covered until zucchini is done. Remove cover and evaporate tomato water. Serve with sprigs of parsley. Serves 4.
