MINUTE STEAK MEXICANA 
2 eggs
1/4 c. milk
1 tsp. cooking oil
3/4 c. all-purpose flour
4 beef cubed steaks (about 1 lb.)
3 tbsp. cooking oil
1/2 c. chopped onion
1/2 c. chopped green pepper
1 tbsp. butter
1 (10 oz.) can tomatoes and green chili peppers
1 c. cubed American cheese
Sliced green onion (optional)

Combine eggs, milk, and the 1 teaspoon oil. Stir together flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Dip meat in flour, egg mixture, then flour again. Heat the 3 tablespoons cooking oil in large skillet. Add meat; cook over medium heat 8-10 minutes on each side. Remove to platter; keep warm.

Cook the 1/2 cup onion, green pepper, and 1/4 teaspoon pepper in 1 tablespoon butter until tender. Add undrained tomatoes; heat through. Stir in cheese until melted. Pour over steaks. Garnish with green onion. Serves 4.
