LUCIOUS SWEET POTATO PIE 
1 (9 inch) unbaked crust
2 med. sweet potatoes, about 1 lb. cooked and peeled
1/2 c. of softened butter
Condensed milk, not evaporated
1/4 c. orange flavored liqueur or 2 tsp. grated orange rind
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 eggs
Whipped cream or whipped topping, opt.

Preheat oven to 350 degrees. In large mixer bowl, mash sweet potatoes with butter, add remaining ingredients except pastry shell, eggs and whipped cream. Beat at medium speed until mixture is smooth and well blended. Stir in eggs. Pour into pastry shell. Bake for 50 to 55 minutes or until wooden pick inserted near center comes out clean. Cool.

Serve with whipped cream if desired. Refrigerate leftovers. Makes one 9 inch pie
