CASSEROLE OF FISH 
1 (20 oz.) can tomatoes or 4 fresh tomatoes, peeled & cut in eighths
1/4 c. chopped chives
1/2 tsp. salt
Dash of pepper
1 tbsp. sugar
1 lb. cod or haddock fillets
1/2 c. chopped parsley or dill
1 tbsp. butter

Place tomatoes in bottom of casserole or four individual casseroles. (If using fresh tomatoes, bake at 350 degrees until tomatoes are soft and tender.) Sprinkle tomatoes with chives, salt, pepper and sugar. Cover each baking dish with fish fillets. Sprinkle fish with parsley or dill.

Cove and return to 350 degree oven and bake about 20 minutes or until fish is done. Top with butter before serving. Makes 3 or 4 servings.
