CARROT - PECAN COOKIES 
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
3/4 tsp. ground cardamom (optional)
1/4 tsp. ground cinnamon
1/2 c. butter, softened
3/4 c. light brown sugar
1 egg
1/2 tsp. vanilla extract
1 c. grated (3 sm.) carrots
1 c. chopped pecans
1/2 c. raisins
1/4 tsp. baking soda

In a bowl combine flour, baking powder, baking soda, salt, cardamom and cinnamon; set aside.

In a second bowl, beat butter with brown sugar until light and fluffy. Add egg and vanilla extract; beat well. Add flour mixture in 2 or 3 batches. Stir in carrots, pecans and raisins.

Drop by tablespoonfuls, 2 inches apart, onto lightly greased cookie sheets. Bake in a preheated 325 degree oven until lightly browned, about 20-25 minutes. Makes about 3 dozen cookies.
