BEIGNETS 
1 pkg. yeast
2 tbsp. sugar (substitute salt when making bread rolls)
1 stick butter
2 c. water
About 6 c. plain flour

Dissolve yeast and sugar in melted butter with water. Knead flour in gradually. Will rise in 1/2 hour. Butter hands, knead again, then cut into pieces, about 2x2 inches. Spread gently with hand and drop in hot oil. Fries very quickly. Sprinkle powdered sugar on top. Happy eating!
