PEAR RELISH 
24 pears
6 onions
6 bell peppers (red & green)
12 hot peppers (red & green)
5 c. vinegar
3 c. sugar
1 tbsp. salt
1 tbsp. mixed spices (tie in cloth)
1 tbsp. celery seed

Peel pears; slice and grind. Squeeze and discard juice. Grind onions, peppers and mix with pears. Place spices in cloth and tie. Add to rest of ingredients. Stir well. Cook 35 minutes after bringing to boil. Stir often. Put in jars. Good with purple hull peas.
