BETTI'S IRMO OKRA OMELET 
1 c. of fresh Irmo growth okra, cut in rounds
1/2 c. chopped scallions
6 to 7 eggs
1/3 c. milk

Fry okra and scallions in 2 tablespoons bacon grease until onions are clear. Remove okra and scallions. Stir eggs into the skillet until they begin to thicken; then add okra and onions and work until done. Serves 4 folks. Serve with cornbread. Great supper after spending the day at the Irmo "Okra Strut".
