PEPPERNUTS 
1 1/2 c. sugar
1 c. butter
1 egg
1/2 tsp. vanilla (older recipes call for 1/2 tsp. oil of anise)
2 tbsp. light corn syrup
2 tsp. baking soda
1 tsp. cloves
1 tsp. ginger
3 1/2 c. flour

Cream butter and sugar until fluffy. Add the egg. Add the liquids. Set aside.

Sift the dry ingredients together. Add half the mixture to the liquids, stir, mix in the remaining dry ingredients. Knead well. Place dough in tightly covered container and store in refrigerator at least overnight.

Roll dough into thin ropes and slice into pieces about the size of an acorn. Put the pieces on a greased cookie sheet and bake at 350 degrees for 7-10 minutes. Bake longer if you prefer crunchy cookies, less to make them more chewy. Remove cookies from pan while still hot and roll in mixture of cinnamon and sugar.

Peppernuts are a Russian Christmas cookie.

The dough seemed REALLY dry, wouldn't even stick together, so I added another egg. I also added an extra tsp of ginger, a tsp of cinnamon, and a dash of black pepper, and I omitted the cloves. I also opted not to roll them in cinnamon sugar after they came out of the oven. They ended up having a texture more like sugar cookies (probably because of the extra egg?), but super tasty!
