PINA COLADA MUFFINS 
1/2 c. white sugar
1 egg
1/4 c. butter
1 c. sour cream
1 tsp. rum extract
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 sm. can pineapple, crushed, drained
1/2 c. coconut

Beat sugar, egg, butter, sour cream, and rum flavoring until well blended. Add dry ingredients. Stir until barely blended. Add pineapple and coconut. 12 muffins, 375 degrees about 20 minutes.
