CHINESE CHICKEN SALAD 
3 chicken breast or mixed chicken parts
Sliced fresh ginger root or 1 tsp. powdered ginger
1 head lettuce, shredded
1/2 pt. chow mein noodles
3-6 green onions, sliced thin
1 pkg. slivered almonds, toasted
1/4 c. sesame seeds, toasted

Cook chicken in water with sliced ginger root (or chicken parts and powdered ginger) for about 20 minutes or until done. Drain and shred chicken; chill. Mix 1 head of lettuce shredded, 1/2 package chow mein noodles, sliced thin green onions, toasted slivered almonds and toasted sesame seeds and chilled chicken. Toss salad and dressing just before serving. 4-8 servings.

DRESSING:

3 tbsp. sugar
1 1/2 to 2 tsp. salt
1/2 tsp. black pepper
1 tbsp. vinegar

Combine and dissolve sugar over low heat. Cool and add 1/2 cup salad oil. Toss over salad just before serving.
