BLUEBERRY OR PEACH BATTER CAKE 
2 c. berries or 1 can peaches
juice of 1 lemon
1 c. sugar
4 tbsp. butter
1 1/2 c. flour
1 1/2 tsp. baking powder
3/4 c. milk

TOPPING:

1 c. sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 c. boiling water

Line a well greased pan with berries or peaches. Sprinkle with lemon juice.

Pour batter over fruit. Cover with topping.

Pour boiling water over all.

Bake for 1 hour at 350°F in 8 inch square pan. When using peaches, eliminate the lemon juice and use a few drops of pure almond extract instead.
