PORCUPINE BALLS 
1 lb. ground beef
1/2 c. rice (uncooked)
1 med. onion, chopped
1 tsp. salt
Pepper to taste
2 c. vegetable soup
4 c. tomato juice

Mix ground beef, rice, onion, salt and pepper together. Shape into 8 balls. Put balls into mixture of vegetable soup and tomato juice. Cook until grains of rice show plainly on outside of each meat ball. Serve sauce over balls, if desired.
