APPLETS CANDY 
1 1/4 c. grated apple (Jonathan or Yellow Delicious are best), divided
2 tbsp. unflavored gelatin (2 env.)
2 c. sugar
1 tsp. lemon juice
1 tsp. vanilla
1 c. chopped nuts
1/2 c. powdered sugar
1 tbsp. cornstarch

Step 1: Mix 1/2 cup grated apple and unflavored gelatin. Let stand for 10 minutes.

Step 2: Bring to a boil 3/4 cup grated apple, sugar and lemon juice. Then add apple and gelatin mixture and boil for 15 minutes. Cool and add vanilla and nuts.

Pour into an oiled 8 inch square pan. Let set 24 hours in refrigerator. Cut in squares and roll in powdered sugar mixed with cornstarch.
