CAROB COCONUT FRUIT LOGS | |
1/2 c. dried apricots 1 c. dried apples with skin 1/2 c. dried papaya 1/2 c. dried dates 2 tbsp. carob powder 1 tbsp. real maple syrup 2 tbsp. molasses 1/2 c. walnuts 1 tbsp. tahini 1 tbsp. concentrated peach syrup 1/3 c. toasted, chopped sunflower seeds 1/2 c. toasted, unsweetened coconut Put the apricots, papaya, apples, dates, and walnuts through a grinder or blender at a medium setting or coarsely chop them. Combine the mixture with the carob powder, tahini, peach syrup, molasses, maple syrup, and sunflower seeds. Divide the fruit mixture in half and roll into 2 long logs. Coat each log completely with the shredded coconut. Keep refrigerated until ready to serve, then cut into thin slices. |
