CAULIFLOWER CASSEROLE 
1 head cauliflower, parboiled and drained
1/2 stick butter
1 can cream of mushroom soup
1/2 to 1 c. mayonnaise
2 eggs, beaten
1 roll Ritz crackers, crushed
8-12 oz. sharp Cheddar cheese, grated

In a bowl mix together butter, mushroom soup, mayonnaise and eggs. In another bowl, mix together Ritz crackers and cheese. Add 1/2 of cracker mixture to sauce mixture. Fold in cauliflower. Place in baking dish and top with remaining cracker mixture. Bake at 350 degrees until bubbling good!
